Baby Leaf Lettuce with Olives and Watermelon
2 cups seedless watermelon cubes, 2 T. extra virgin olive oil, 1 T. Champagne or white wine vinegar, salt & pepper, 12 cups baby leaf lettuce, torn and loosely measured, 1/2 small red onion thinly sliced, 1/2 cup snipped chives, 1/4 cup Italian parsley and 1/2 cup pitted Picholine olives halved.
In blender or food processor, puree 1/2 cup watermelon chunks. Strain juice through a fine sieve into a large bowl = to about 2 T. Whisk olive oil with vinegar into watermelon juice and season with salt and pepper. Add lettuce, onion, chives, parsley, olives and remaining watermelon chunks ~ toss gently. Transfer to large platter and serve immediately. One serving = 94 calories.
